With the Standard Overload stem, how much do I need to cut the forks down for it to run flush and would a regular stem still work safely with the fork cut down so much?

Nope. Only came with a 19mm adapter. I'll draw one up on solidworks and cnc it In school tommorow. Thanks dude.

Where would I get a hat washer so that my Odyssey sprocket will fit properly on my Fly V3s? Should the sprockets come with a washer like that?

Pretty much. Before you file it down , unscrew and screw back on the nut a few times so you keep the threads clear.
