Accuracy International makes a chassis kit that fits a Remington 700. If I go AI, I'll go 700 as well. I can't afford to go full AI.

Honestly, what is so fun about shooting guns at targets? I shot some 9mm rounds at a range in vegas and there was nothing exciting or enjoyable about it at all.

Maybe I'm missing something, but I'd much rather do pretty much anything than pay tons of money to stand in one spot and shoot at some circles printed on a piece of paper.

Not everyone likes the same things.
Most people that own guns have fun shooting them.

I will never understand why someone would feel like they need to own an assault rifle.

Most of the people that legally own Assault rifles (semi-auto, and auto), have them for fun. They go down to the range on the weekends with their AR-15 or AK and have a blast shooting. Another reason might be to defend them self's if a large natural disaster such as hurricane Katrina occurs. When the next big earth quake in LA occurs I would much rather have a gun in my house then to not.

california gun laws are weird

you can have folding stock and pistol grips on pump action shotguns (if the overall length with at least an 18" barrel is 26"), but you cant on a ruger 10/22

Pistol grip.
For normal shooting the stock won't do anything for you.

Couch This is a great place where can rent handguns to try out. They have quite a few different guns you can try out, Glock, Kimber, Taurus, H&K, Ruger, S&W, Springfield, Para Ordnance, and more. Who knows you might end up wanting a 1911.

Recommended caliber...?

I'm not a big guy, but I want something somewhat powerful that is still fun to shoot and manageable. I highly doubt I will use it alllll the time but I do want to be comfortable with it and have it be almost second nature to load it, and use it as necessary if the time comes. It will be more of a hobby type deal rather than hunting all the time. So if it feels like I'm slamming my hand in a door every time I shoot it it isnt a huge deal. As of right now I'm looking at the Taurus Tracker .44 Mag and a Glock 26 (9mm)as a backup. I also dont want rounds that arte tooo expensive if there is something cheaper and more fun to shoot. So basically something for home defense that is reliable (Glock) and/or something that is just a mean looking fun gun to shoot every now and again (Taurus). Would these calibers be ideal? should I go smaller/bigger...? I won't be shooting buffalo but I also dont want to have buyers remorse and wish I got something larger.

I would go with a Glock 19, or 23 for back up.
I would only get the Glock 26 if you were going to be carrying it on a daily basis. Small guns are less accurate and less fun to shoot,
so if you get something bigger like the 19 or 23 you can still have fun with it at the range.
I would suggest you go over to AR15.com and look around the forums a bit, you will definitely learn a thing or two.

I want one of those little tiny pistols you see in the movies, like the ones the size of your palm.

A Deringer, I've seem people that had belt buckles made to hold them.

Revolvers are sweet. But they are loud as fack and aren't as efficient. If you're just 'plinking' in your backyard or at a target range then they are definitely fun to shoot.

God, I want to shoot a Glock 18 w/ an extended clip. Full auto. Up to 20 rounds a second. Sick nasty.

You say that a revolver is not efficient, yet you want a glock 18.
An automatic hand gun is probably the least efficient fire arm ever.
